Frozen Raspberry Macadamia Pie
Crust: 1 cup vanilla wafers (about 20)
1/2 cup finely chopped macadamia nuts 1/4 cup margarine, melted
Filling:
1 14-oz can sweetened condensed milk 3 Tbs. lemon juice 3 Tbs. orange juice 1 10-oz pkg frozen raspberries, thawed 1 cup whipping cream, whipped
Heat oven to 375 degrees. In small bowl, combine crushed wafers, nuts, and melted margarine; mix well.
Press firmly in bottom of ungreased 8-inch springform pan. Bake for 8-10 minutes. Cool
In large bowl, combine condensed milk, lemon and orange juice;
beat until smooth. Add raspberries, beat at low speed until well blended. Fold in whipping cream, pour over cooled baked crust. Freeze until firm. Let stand at room temperature for 10 minutes before serving.
